Chinese Scallion Pie, Inc. (CSP) was founded in 1991 by a husband and wife team. They emigrated from China to Boston, Massachusetts, and worked at various restaurants while also experimenting with scallion pancake recipes until they found one that they felt embodied all the textures and flavors a scallion pancake should have.  

With a product they wholeheartedly believed in, they decided to take a risk and start their own business making and selling their scallion pancakes. They knew they had a great product but the challenge would be convincing other business owners that their scallion pancake would be a delicious item to serve in their establishments, at a time when the scallion pancake was not something that was in demand. 

After years of pouring their heart and soul into the business, they would see their hard work pay off as they were able to win over restaurants, grocery stores and even distributors. Now, the scallion pancake is a staple item you will find in almost any Chinese restaurant menu and Asian grocery store.
